What is varietal honey? Honey can have a wide range of taste, flavor notes, color and texture, all of which depend upon what kind of flowers the bees have gathered nectar from. Varietal honey is also called 'nectar source honey' or "mono-floral honey' as the bees make honey predominantly from the nectar of a single type of flower. This makes individual varieties unique and well suited to different uses and food pairings.

Please be aware that since this is a raw honey, it will sometimes crystallize at room temperatures. This is a totally safe and natural process, and warming it gently in a bath of water will bring it back to a liquid state.
